Organic Honey Phacelia

 Phacelia, also known as "bee pasture", is mostly grown in the region as a catch crop and green manure. When phacelia is cultivated as such, it is usually too late in the year for the beekeeper to have a successful honey harvest. Coincidentally, these fields, which are beautiful to look at, already bloom in early summer for the purpose of seed propagation. 
 Organic phacelia honey tastes pleasantly mild and is ideal as a neutral sweetener.
